Cod Fish & Mushrooms Risotto

products :

  1. Cod Fish, shiitake mushrooms, Italian style rice , olive oil, butter
  2. Shallots, garlic, carrot, green squash fresh parsley, spring mix salad, hot paprika
  3. salt & pepper, lemon juice, honey, turmeric

Cut one shallot for thin rings, set aside. Second one cut into little cubes. Chop garlic and set aside with shallot. Clean and cut thin the carrot.  Do the same with squash.

Make a simple vinaigrette. Water , half amount of white vinegar few bay leaves, pepper corn, salt & pepper , 1 tbsp of honey. To the boiling vinaigrette add sliced carrot, squash and shallot. Cook for 5 minutes then drain and cool down.

On a 2 tsp of olive oil fry onion & garlic. Add cut small shiitake mushrooms. After while add 1/2 cup of rice stir and fry for few minutes.  Add 1 cup of water and 1 cube of fish stock or simple fish broth . Cook for about 15 minutes adding water as needed until rice won’t absorb more. At the end of the cooking add 2 tbsp of lemon juice, turmeric & black pepper. Stir, turn of the heat and cover.

Prepare the cod fish. Season both side with salt, pepper and hot paprika. Fry them on 2 tbsp of olive oil for 2 minutes. Flip them over add 1 tbsp of butter. Fry them for  another 2 minutes, busting with butter. Finish in the oven for 5 minutes at 380 F.

Serve with pickled veggies,  risotto and  spring salad.
