Curry Chicken
List of products
- two double chicken breasts
- 1/4 cup of white rice
- 1/2 onion
- 1 red paprika
- 2 cloves of garlic
- tbsp of fresh cut ginger
- 2 small carrots
- fresh parsley
- fresh cilantro
- one stick of lemon grass
- 1/2 cup of milk
- 1/2 cup of veggie broth
- 1/2 cup of coconut milk or cream
- 1/4 cup of heavy cream
- salt, pepper
- nutmeg, cinnamon, cumin, red paprika, chili paprika, allspice, coriander, savory, curry powder and curry paste
Before you start preparing the products put chicken breast into the milk for min. 30 minutes, then you can start cutting onion, carrots, ginger, garlic and fresh parsley-cilantro mix
prepare seasoning mix 1 tsp curry powder,1/2 tsp red paprika 1/2 tsp chili paprika, 1/4 tsp cumin 1/8 tsp allspice, 1/8 tsp cinnamon 1/2 tsp savory, 1/2 tsp turmeric
1/2 tsp nutmeg, 1/8 tsp cloves powder salt and pepper
after 30 minutes strain chicken from the milk and cut them into thin pieces,
pour the seasoning into a bowl and mix with chicken
start frying onion, adding salt add carrots then red paprika, stick of lemon grass,
fresh ginger and garlic. After few minutes of frying, add seasoned chicken, fry them for 10 minutes, stirring occasionally. Next add veggie broth, coconut cream,1 tsp curry powder, heavy cream. Then pull out the lemon grass, add 1 tsp agave syrup and 1 tbsp curry paste. After a few minutes of reducing the sauce, add fresh parsley.
Serve with long grain white rice, garnish with leftover of parsley-cilantro mix
