Pork loin with apples in a company of celery root slaw

Products:

  1. Pork loin 4 lbs.
  2. Potatoes, 2 carrots, 1 onion,1 celery  root, 5 apples
  3. Salt & pepper, garlic powder, savory, marjoram and sugar

Cut the onion and 3 apples, clean the pork from the fat,  then season with salt & pepper. Ad garlic powder, red paprika and savory and roll all around. Fry pork loin on 4 tbs of olive oil, all sides to golden brown, then set aside. On the same grease fry onion, after 2 minutes  add apples and keep frying. When soft put the pork loin back to the pot,  add 2 cups of water, cover and  cook for min 1 hour.

Prepare celery slaw. Peel from the skin celery, carrots and apples. Then using veggie grainer start grain,  all veggies and 2 apples. Season with salt & pepper. Add 2 tbsp of Greek yogurt and one tbsp of mayo. Finish with lemon juice and sugar.

Come back to cooking meat. Remove pork from the pot and slice it for half inch pieces. Blend the onion – apple liquid, season with salt & pepper,  marjoram and sugar or honey. Put the meat back to the blended sauce, cook for few more minutes on low heat. Make mush potatoes, means  cook, dry and smash. Add sour cream and mix. Serve
