Salmon Breakfast Sandwich

Products:

  1. Smoked salmon
  2. Toast bread, butter
  3. 2 eggs
  4. Iceberg lettuce, lemon
  5. Salt & pepper
  6. Garlic powder, sugar, chili paste 
  7. Tzatziki sauce and fresh dill

First melt 1 tbsp of butter, add lemon zest and juice from 1/2 lemon then set aside. Start building lemon sauce adding 1 tsp of sugar to the yolk, then mixing  for about  1 minute.  Slowly add butter with lemon, stirring constantly. Add salt, pepper and garlic powder, stir and set aside.

To the boiling water add a little of vinegar. Slowly but definitely pour eggs into the pot with boiling water, one by one. Using a tea spoon very gently circle around the eggs. After about  2 minutes of cooking, remove eggs from the pot and set aside on paper towel.

Start preparing sandwich. Toast the toast, then the smear toast with tzatziki, add iceberg lettuce at the next layer add salmon, brush with chili paste.  Put poached eggs on top the salmon and pour lemon sauce over the eggs. Cut sandwich in half and open the eggs to get runny yolks. Garnish with fresh dill.
