Sauerkraut with Mushrooms
Products :
- Sauerkraut 4 lbs,
- White mushrooms 32 oz, wild dry mushrooms 4 oz
- 1 onion, olive oil
- Salt & pepper, nutmeg, savory, coriander
- All spice, bay leaves and garlic powder
First you need to soak wild mushrooms into 1 cup of water and after 2 hours start cooking them for next 30 minutes. Then You have to pour water to the sauerkraut, enough to totally cover them and drain them.
Cut and fry onion on 2 tbsp olive oil, add white mushrooms and keep frying, stirring occasionally. After 10 minutes, pour sauerkraut into the pot. Fill out cooking sauerkraut with water and keep cooking on medium heat. Come back to mushrooms add salt & pepper, stir. Drain wild mushrooms saving mushrooms water and add drained wild mushrooms to white mushrooms stir and keep frying. Pour mushrooms water into the sauerkraut. Cover and keep cooking on medium heat.
Grind the mushrooms in a mincer then add to cooking sauerkraut. Stir & keep cooking to reduce liquid. Add salt and min 2 tsp of black pepper plus 1/2 tsp of rest of other spices.
You can serve alone as additives or with cooked butter beans as a dish or as a filling to croquettes or pierogis.
